  1. Heat Mustard oil in a kadai, add the bay leaf then the chopped oinon and bhunno it. When the onion becomes translucent, add the drumsticks first (because that is the biggest meat piece in the lot.... All others are smaller in size so I added later on.) and Bhunno it along with the onion.
  2. Then add the other meat part after 5-10 minutes and mix. Add the salt too. Then add the ginger garlic paste and all dry spices- add water if required so that it doesn't burn. Add little water as n when required. Bhunno it.
  3. After 10 mins, add the garam masala and mix let it cook. After sometimes, add the Dry Fenugreek leaves/ Kasuri Methi to it mix well..kasuri methi gives nice aroma and taste to the JHOL / soup all these process will take about 20-25 minutes.
  4. Then add the water as required.may be about 2 litres of hot water,in between also you can as and when required.boil it for an hour or so, till the meat gets cooked, it may take more time too because Desi /country chicken takes time to cook and it depends on the toughness and the maturity of the chicken and the size of the pieces and also if you cook along with the skin it takes more time. Check the consistency of the JHOL / soup.I keep it thin because I don't like thick gravy.
