- If you have a soup maker: Add the tomatoes, peeled garlic cloves, water and stock to the soup maker. Then add the softened onion & Chilli mix. Put the soup maker on Smooth setting and allow it to do its thing.
- If you don't have a soup maker: Add these ingredients to the onion and chilli in the pan. Simmer for 20 minutes. Whizz with a hand Blender until smooth.
- Now add 5ml of Maple Syrup and 100g of chopped Spinach. You may wish to add extra salt according to personal preference. Stir, cover and allow the Spinach to wilt.
- Serve with a wholesome bread or use as a pasta sauce.
