  1. Boil water, add lemongrass, fresh makrut Thai lime leaves and oxtail. Banch for 15 minutes, scoop up and wash in clean water.
  2. Put water, oxtail, lemongrass, ginger, coriander root, fresh makrut Thai lime leaves, salt and ground black pepper in a pressure cooker. Bring to a boil and simmer in a pressure cooker in the meat function.
  3. Release the pressure, open the lid. Remove from pressure cooker, and simmer for 10 minutes on the stove. Add onions, tomatoes, season with lime juice and chilies.
  4. Sprinkled with coriander leaves, spring onion and and fried shallots before serve.
